Instructions
Slice the cucumber lengthwise into thin strips using a vegetable peeler or mandoline.
Spread a thin layer of low-fat cream cheese on each cucumber strip.
Place a piece of smoked salmon on top of the cream cheese.
Scatter a few capers and a pinch of fresh dill over the salmon.
Roll up each cucumber strip tightly, securing with a toothpick if needed.
Season the roll-ups lightly with salt and pepper to taste.
