Instructions
In a small saucepan, combine the rolled oats and almond milk. Stir well to integrate.
Bring the mixture to a gentle simmer over medium heat, stirring occasionally, until the oats begin to soften and absorb the milk.
Add half of the sliced banana and continue to cook, stirring, until the porridge reaches a creamy consistency.
Stir in the chia seeds and ground cinnamon, then let the mixture sit for a couple of minutes to thicken.
Transfer the porridge to a serving bowl and top with the remaining banana slices, almond slices, and a drizzle of honey.
Season to taste with a small pinch of salt and a sprinkle of freshly ground black pepper if desired.
