Instructions

Season & Cook Chicken

Preheat oven to 200°C (fan). Cut chicken into bite-sized pieces| toss with cooking spray and all spice blend ingredients. Spread on a lined tray and bake 15–20 min until golden and cooked through.

Prepare Bases & Veg

Microwave quinoa according to pack (or cook dry quinoa). Steam peas in microwave bag for 2–3 min. Dice cucumber and halve (or leave whole) tomatoes.

Mix Sauce

In a small bowl| stir yogurt| garlic powder| lemon juice| and salt until smooth.

Assemble

In a bowl| layer lettuce and quinoa| top with chicken and vegetables| then drizzle with sauce.
