Instructions
Crack the egg into a bowl, season with salt and pepper, and whisk until combined.
Heat a drizzle of oil in a small non-stick pan over medium heat.
Pour in the whisked egg and cook, stirring gently, until scrambled and just set. Remove from heat.
Mash the avocado in a small bowl with the lemon juice, ground cumin, and a pinch of salt.
Lay the whole grain wrap on a plate. Spread the mashed avocado evenly over the wrap.
Top the avocado with the scrambled eggs, followed by halved cherry tomatoes and baby spinach.
Crumble the feta cheese over the top and sprinkle with paprika.
Roll the wrap tightly and cut in half diagonally.
